About This Whisky
Sullivans Cove American Oak Ex-Bourbon Refill Single Cask TD0449 is an 11 year, 6 month old Tasmanian single malt matured in a single 200L American oak cask. Distilled in November 2013 and decanted in May 2025, the cask had previously matured an older batch of Sullivans Cove Single Malt Whisky before being selected for a second maturation.
Bottled unflocked and unfiltered at 50.0% ABV, TD0449 yielded just 212 bottles. The refill American oak maturation places the distillery's spirit character at the forefront, delivering a creamy, fruit-driven whisky layered with tropical fruit, confectionery richness and gentle savoury complexity.
Tasting Notes
Nose: Soft, fruity and gently floral, opening with honeyed sweetness and jasmine. White chocolate, rice bubbles and rice pudding form a creamy core alongside vanilla milkshake and malt. Buttery oak, wildflowers, marshmallow, dates and musk sticks add warmth and confectionery depth, with a faint perfumed lift.
Palate: Juicy and fruit-forward, led by pineapple upside-down cake, tinned peach, fruit jubes and mango purée. Full and syrupy with a silky texture and gently building tannins, followed by pistachio, custard and maple syrup. Yoghurt-like creaminess and a touch of liquorice complete the layered palate.
Finish: Comforting and pastry-driven, with milk bottles, honey muffins and warm custard buns followed by brown sugar and crème brûlée. Waxy macadamia, honey and warm oats add weight, while gentle wood, sarsaparilla and a subtle dill pickle nuance introduce a savoury edge. A mild metallic tingle lingers through the smooth finish.
