Overview
A classic village Puligny-Montrachet assembled from ten small parcels across the appellation. The 2023 combines old-vine concentration with the domaine’s restrained élevage, showing the freshness, mineral definition and precision characteristic of Jean-Louis and Paul Chavy’s style.
Vineyard
The wine is sourced from ten small parcels across Puligny-Montrachet, including Les Tremblots, Les Meix, Les Levrons, Corvée des Vignes and Les Reuchaux. These holdings lie below the Premier Cru vineyards and extend across the village from north to south.
Vine age ranges from approximately 20 to 60 years, averaging around 50 years. The domaine farms sustainably using organic principles, with an emphasis on preserving the individual character of each site.
Winemaking
The Chardonnay is whole-bunch pressed, followed by approximately 24 hours of settling under temperature control before fermentation with natural yeasts. The domaine does not use bâtonnage.
The wine is matured for approximately 11 months in barrel followed by a further seven months in stainless steel. Around 15–20% new oak is used, with a preference for larger 350-litre barrels to reduce oak influence and maintain freshness and terroir expression.
Producer
The Chavy family has lived and cultivated vines in Puligny-Montrachet for more than two centuries. Domaine Jean-Louis Chavy developed from the former Gérard Chavy estate, with Jean-Louis establishing his own domaine and later being joined by his son Paul, who returned to the family business in 2020 after studying viticulture and oenology.
The domaine farms approximately seven hectares, principally in Puligny-Montrachet, including Premier Cru holdings in Les Folatières, Les Perrières, Les Clavoillons and Les Champs Gains. The wines are produced with restrained oak, natural yeast fermentation and a strong focus on vineyard expression.
