Overview
Yarra Yering Carrodus Cabernet Sauvignon is a highly regarded, cellar-worthy expression produced exclusively from a distinguished section of the estate’s historic No.1 Cabernet Sauvignon block. The 2021 vintage combines exceptional fruit purity and energy with fine tannins and precise oak maturation.
Vineyard
The fruit was sourced exclusively from the southwest corner of the No.1 Cabernet Sauvignon block, planted in 1969. This selected parcel follows a gravel band through the vineyard and produces Cabernet Sauvignon of distinctive concentration, structure and longevity.
Winemaking
The fruit was harvested by hand, destemmed and crushed into Yarra Yering’s half-tonne open fermenters. It was hand-plunged twice daily, with extended time on skins used where required to soften the tannins. The wine was gravity-filled into Bordeaux-shaped French oak barrels, including 40% new oak, and matured for 15 months while completing malolactic fermentation in the cool underground cellars.
