Overview
Les Clos is the crown jewel of Domaine Vincent Dauvissat’s portfolio and one of the most prestigious Grand Cru vineyards in Chablis. Produced in very limited quantities, this benchmark Chardonnay combines remarkable concentration, incisive minerality and exceptional ageing potential.
Vineyard
Les Clos is the largest of Chablis’ seven Grand Cru vineyards, spanning approximately 25 hectares. Domaine Vincent Dauvissat farms a one-hectare parcel with a south-westerly exposure at 100-150 metres above sea level. The vines average more than 40 years of age, with some exceeding 50 years.
The vineyard’s Kimmeridgian limestone and marl contain abundant marine fossils. These well-drained soils, combined with excellent sunlight exposure and protection from northerly winds, support full ripening while preserving the vibrant acidity associated with exceptional Chablis.
Viticulture and Winemaking
The parcel has been farmed according to non-certified biodynamic principles since 2002. Yields are restricted to 50 hectolitres per hectare or less, and the grapes are harvested by hand.
Whole clusters are gently pressed before natural fermentation with indigenous yeasts in stainless-steel tanks. The wine is then matured primarily in neutral oak barrels for 12-18 months. Bâtonnage is avoided to preserve purity and an unforced expression of the vineyard.
