Overview
The 2000 Jasper Hill Georgia's Paddock Shiraz is a mature Heathcote Shiraz from one of Victoria's landmark producers. Georgia's Paddock is the larger of Jasper Hill's estate vineyards, with its original Shiraz block planted in 1975 and additional vines planted in 1987.
This release shows the concentration, savoury complexity and age-worthy structure that have made Georgia's Paddock one of Heathcote's defining Shiraz wines.
Vintage & Winemaking
The original Georgia's Paddock Shiraz block was planted in 1975, with further vines added in 1987. Ten hectares of low-yielding Shiraz form the core of production. The fruit is fully destemmed, fermented with natural yeasts and kept on skins for 5-6 weeks before gentle pressing and 12 months' maturation in French oak.
At release, Jasper Hill described the 2000 vintage as a delightful expression of red and dark berries, rich spice and chocolate, with fine supple tannins, natural acidity and a voluptuous, viscous palate.

Vibrant magenta colour with a rich dark berry nose. The palate offers a vivid hit of fresh red fruits, spice and a luscious mouthfeel, finishing with savoury length and mature complexity.

Cellaring Potential
This is a mature release and should be approached as a drink-now bottle. Careful decanting is recommended, and condition will depend on provenance and storage.
About Jasper Hill
Jasper Hill is one of Heathcote's pioneering estates, founded by Ron and Elva Laughton in 1975. The vineyards are dry-grown on their own roots and farmed using organic principles, with no synthetic chemicals used in the vineyard. Georgia's Paddock and Emily's Paddock are named after the Laughton daughters and sit on ancient Cambrian basalt soils, a key part of Jasper Hill's distinctive power, mineral depth and longevity.
