At release, the 2000 vintage was described as an elegant and beautifully balanced expression, showing sweet red berries, mixed spice, perfume and exceptional length. Now fully mature, it offers a rare opportunity to experience the developed character of one of Jasper Hill's most recognised vineyard wines.
Vintage & Winemaking
Emily's Paddock is Jasper Hill's smallest vineyard, covering approximately 2.7 hectares on an easterly facing slope. Its naturally low yields contribute concentrated flavours and the firm tannin structure traditionally associated with this wine.
The Shiraz and Cabernet Franc were co-fermented with natural yeasts and remained on skins for five to six weeks before gentle pressing. The wine was then matured for 12 months in French oak, with the restrained production approach preserving the vineyard's fruit, natural acidity and distinctive structure.

Tasting Notes
Appearance
Medium crimson with mature garnet tones, reflecting its extended bottle development.
Aroma
Fragrant redcurrant, strawberry and red cherry aromas are joined by chinotto, leather and subtle polished-wood notes, with savoury and smoky nuances emerging with air.
Palate
Supple and creamy in texture, showing mature strawberry, redcurrant, chinotto and cola-like flavours. Fine, lacy tannins provide structure, while savoury, smoky and meaty notes contribute complexity to the developed fruit.
Finish
Firm, dry and persistent, with lingering red fruit, spice, savoury complexity and fine mature tannins.
