Roussanne was pressed straight to old barrels to preserve perfume, while Viognier was fermented in old barrels. The wines matured in old oak for 10 months before bottling, without fining or filtration.\u003c\/p\u003e\n\u003ch4\u003eTasting Notes\u003c\/h4\u003e\n\u003cp\u003eThe wine shows a soft golden colour with orange hues. Aromatically expressive with tea, honeysuckle and cumquat blossom, alongside dried herbs, stone fruit and spice. The palate is layered and textural, with apricot richness, chewy phenolics and a long, savoury finish, balanced by freshness and silkiness.\u003c\/p\u003e\n\u003ch4\u003eAbout the Producer\u003c\/h4\u003e\n\u003cp\u003eThere are few wineries in the Yarra Valley with the prestigious history of Yeringberg. The de Pury family were pioneers of the region, establishing one of the first vineyards over 100 years ago. After the original vineyard was replanted in the 1970s, Yeringberg became one of the great sites of the modern Yarra.\u003c\/p\u003e\n\u003cp\u003eYeringberg is known for traditional winemaking and wines of finesse and elegance.
