The region is characterised by a Mediterranean climate with hot temperatures, abundant sunshine, highly seasonal rainfall, and the prevailing Mistral wind.\u003c\/p\u003e\n\u003cp\u003eThe entire crop is destemmed before fermentation and maceration in closed vats for approximately 15 days, with daily pumping over to ensure extraction. Fermentation temperatures are controlled between 28°C and 30°C. After devatting, pressing, and racking, malolactic fermentation takes place in stainless steel vats.\u003c\/p\u003e\n\u003cp\u003eThe wines are aged in vats to preserve fruit aromas, with regular racking to allow natural stabilisation.
