Production is tiny and meticulous, with wines released as IGP Pays d'Hérault rather than under the local AOC.\u003c\/p\u003e\n\u003cp\u003eThe estate was founded by the late Laurent Vaillé, who trained in viticulture and oenology and worked with JF Coche-Dury, JL Chave and Domaine de Trévallon before returning to Aniane. The first vintage was released in 1992.\u003c\/p\u003e\n\u003cp\u003eCabernet Sauvignon and Syrah are planted on limestone soils at 300 metres altitude with northerly exposure, while Mourvèdre is planted on pierres roulées with a southerly aspect. Yields are kept extremely low, often between 10–25 hl\/ha depending on vintage conditions.\u003c\/p\u003e\n\u003cp\u003eThe wines are vinified separately by variety using natural yeasts and long maceration.
