Vinification is carried out traditionally in open concrete vats after two days of cold pre-fermentation maceration. Fermentation continues at a controlled temperature of 28°C to 30°C, with daily punching down and pumping over for about ten days. Total maceration time can reach 20 days. After racking and pressing, malolactic fermentation takes place in oak barrels.\u003c\/p\u003e\n\u003cp\u003eThe wines are aged in oak barrels.
