Mammolo, a lightly coloured, fragrant, musk-like grape accompanies Sangiovese in this wine.\u003cbr data-mce-fragment=\"1\"\u003e\u003cstrong\u003eWinemaking:\u003c\/strong\u003e\u003cspan\u003e \u003c\/span\u003eSangiovese grapes were hand-harvested in the cool of the morning in March, and early April. The grapes were whole-bunch pressed, yielding just the barest pink colour in the juice.
