From three parcels, two of them on rocky shallow soil and all three in relatively sunny spots; Tremblay has cut back on her use of new oak for this wine owing to the natural reductiveness of the terroir. About 2,700 bottles are produced every year.\u003c\/p\u003e\n\u003cp\u003eFruit is manually harvested and fermented with some stems in wooden vats. The domaine was founded in 2003 by Cécile Tremblay, great-granddaughter of Edouard Jayer.
