Small batches are crushed and fermented in five-tonne open fermenters with foot treading during fermentation. Basket pressing and French oak barrique maturation complete the process. The wine shows red berries, cassis, refined leafy notes, spicy acidity and gravelly tannins with restrained oak and old-vine character.
