The original planting of vines in 1988 saw Chardonnay and Pinot Noir replace sheep as the focus at Bindi.\u003c\/p\u003e\n\u003cp\u003eThe Original Vineyard is a gently north-sloping, three-acre site with quartz-riddled soils. It has become known for its signature perfumed bouquet and silky, pure palate, producing very fine, spicy and fragrant wine with high natural acidity.\u003c\/p\u003e\n\u003cp\u003eThe wine spends 15–17 months in French barrels (about 25% new).
