Winemaking includes strict green pruning, a three- to four-day cold soak, long and slow fermentations of around 30 days, and infusion rather than forceful extraction. Most cuvées are vinified with a portion of whole clusters. Grapes are manually selected, picked in multiple passes and sorted rigorously.
