The Drouhin estate farms 0.67 hectares, with vines averaging 33 years of age. The site has a mild incline, eastern exposure and brown chalky soils with scattered pebbles. Harvesting is done by hand in small open crates to preserve fruit integrity, followed by sorting in both vineyard and winery. Vinification lasts two to three weeks with indigenous yeasts and carefully controlled extraction through pigeage and remontage. The estate is now run by the fourth generation—Frédéric, Laurent, Philippe and Véronique—with Philippe managing biodynamic vineyards. Since 2009 the full range has been ECOCERT certified organic.
