After fermentation, all barrels were racked and blended in tank, with the finished wine returned to barrels in May 2023. Of the barrels, 49% were new, and the remaining 51% were second and third use. After 18 months, in June 2024, the wine was racked and blended in tank and fining trials were carried out. For those readers curious about the whole bunch addition, the explanation is as follows.  This enhances quality because the presence of the bunch stems brings important components.  The first is extra tannin, which adds backbone to the palate and also helps stabilise colour, something that can be lacking in Pinot Noir.  The second is the lifted, spicy complexity in the aroma profile. The must was chilled for 48 hours to enhance flavour, colour, and tannin extraction. After warming, each tank was inoculated with multiple yeast strains for primary fermentation. Extraction of colour and flavour was by hand plunging, three times daily and each batch remained on skins for two weeks. After fermentation, the wine was pressed to stainless steel for completion of both alcoholic and malolactic fermentations. The wine was then transferred to French oak barrels (18% new) for 18 months of maturation. Fining trials indicated that no fining agents improved tannin balance, so the wine remained unfined. This has got some weight but it’s held with control by the dab hand of a lemon citrus acid tang. Very long finish. This has the refined elegance and prettiness that is the Moss Wood DNA. The colour is quite pale compared to some previous vintages, but don’t be fooled into thinking this is some shrinking violet. Violets, yes, but plenty more in an engine room that is balanced and poised as the tannins and almost lyrically laid oak harness the exquisitely bright fruit. So well balanced. A wine of immense charm and appeal. I defy you to stop after the first sip. On the nose dark and red berry aromas of blueberry, blackberry and redcurrant, plus some dark jube and musk, a sure indicator of the presence of Petit Verdot. The complex background is all about Cabernet Sauvignon, with lots of tar, dark chocolate and toasty oak. PALATE: There is a concentration of all features which make this a classic, low-crop Moss Wood Cabernet Sauvignon, which in many ways, takes us all the way back to 1981. A full-bodied wine, there are generous blueberry and blackberry flavours, as well as dark, chocolate, coffee and licorice that fill the mid-palate. They sit over a structure of fresh acidity and concentrated tannin, making the wine bright, long and, for Moss Wood Cabernet Sauvignon, quite taut.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003e90% Cabernet Sauvignon, 3% Cabernet Franc, 7% Petit Verdot. 17% new oak. Red and black fruit, something of an aniseed pastille thing here too, some floral notes, tobacco, cedar, and baking spice. It’s medium-bodied, kind of svelte and evenly weighted, just a little toasty oak, with some black olive and nori savoury elements. the tannin is quiet, and kind of latent, but swish it about in your mouth a bit, and their quality is revealed, especially on the long finish.
